Oatmeal Protein-Packed Bars

1 Cup Oatmeal (you could use 1/2 cup steel cut & 1/2 cup rolled oats or just one of these) 
2 Tablespoons chia seeds
1 Tablespoons ground flax seeds
1/4 Cup coconut flakes, unsweetened
1/3 Cup Nut Butter (your choice or mix them up! almond, peanut, cashew...there are so many choices)
1/2 Cup dark chocolate chips
1 teaspoon vanilla
1/4 Cup honey


  1. Mix dry ingredients well, if desired, grind a little sea salt into mix. Mix wet ingredients, then combine the dry and the wet together.  
  2. Prepare a casserole dish or a sided pan with coconut oil on the bottom. Put in fridge for a good 30 (+) minutes.
  3. Take out and cut into bars!  You could also roll these into little balls.  Store them in the fridge.  These are raw, so they do not crisp up.
  4. Sprinkle a little fine coconut over top if you'd like.


It's endless what you can put in this...nuts, seeds, chopped dates, raisins, etc.
