Veggie Meatloaf

Ingredients

1 pound organic ground beef
1 shredded carrot
½ cup shredded zucchini
Small onion
½ cup black beans
Garlic( optional)
Turmeric & cayenne if you like a little spicy

Directions

  1. Puree the carrot, zucchini, onion, and beans in vitamix or blender. You can also just chop up veggies and mix in with meat.
  2. Mix vegie mixture with ground beef. Add about 2 tablespoons of bread crumbs.
  3. Pour into loaf pan. Cook about an hour. It is very moist.
